Turkey pate with carrots and zucchini.....at ktichen! kitchen!

Turkey Pate
Another way of doing your ground turkey.
Tha pan is lined with parchment paper for easy
lifting of the pate after it has cooled.

There are many ways of making a pate.
A colorful turkey pate with shredded carrots, zucchini, and bacon.
For recipe - see previous posting of "Veal Pate" - add more shredded carrots and zucchini
This is wonderful to have in your fridge for making sandwiches or for those times when all you need is just a light meal with a green salad.

Broccoli rabe...either hate it or love it!.....at kitchen! kitchen!

Broccoli Rabe....you either hate it or love it!... We just love it
at kitchen! kitchen!
Simply sauteed in olive oil with slivered garlic and
some sprinkling of crushed pepperoncini will
make you fall head over heels with it.
Great as a side dish or over pasta.
It's peppery and "bittery" taste
just tumbles in your mouth.

fish chili.....ever heard of one? .......at kitchen! kitchen!

My Fish Chili With Chickpeas 
A dish that  is an absolute delight to the palate.
This is especially a great dish to make when you have a
package of frozen fillet of fish....or a delicate fish that will
just scream with fright and collapse in flakes right at your your
very eyes as soon as it hits the pan.



MY INGREDIENTS ARE:

6 small pieces of fillet of sole thawed
15 oz. can of diced tomatoes (I used Del Monte's organic diced tomatoes)
3 tablespoons of capers - rinsed and drained
15 oz. can of chickpeas - rinsed and drained
2-3 pieces of chipotle chilis (from the can) chopped  -use less if the "heat" is not your thing
1 small onion chopped
1 jalopeno
Kosher salt

In a hot pan with olive oil - sautee the onions; add a pinch of salt until onions are
trasnparent. Slowly add the can of diced tomatoes, jalopeno; simmer for 2-3 minutes then add the fillets stirring carefully for a minute of so until the fish turns opaque.
Add the chickpeas and capers correct seasoning and let simmer to reduce the sauce a little.

SUGGESTION: Add a 1/4 cup of diced spanish sausage ( I would have if I had not run out of my supply of spanish sausages/chorizos).
Serve on top of rice or with a crusty bread.

A simple dish of boiled beef with your favorite vegetables
What could be more simpler than that!
Serve with SALSA VERDE and boiled potatoes --- you've got yourself a
dish that would just warm your heart.
Great also served with grainy Dijon mustard.

salmon - pan seared to perfection....at kitchen! kitchen!

Salmon steak delicately seared to perfection nestled on a
bed of salad. Absolutely delicious!
Perfect for any meal.
Season lightly with salt and pepper and pan sear in olive oil - it's that easy.
For the salad, refer to previous posting of" "SYMPHONY of TASTE" on 12/13/10
I used reconstituted dried cherries in lieu of fresh figs, added roasted red peppers,blanched string beans, and baby spinach.

Make your own "symphony of taste" and you'll love it!
