..and you've got a  truly a delicious appetizer.
Serve with your favorite sauce or condiment

roasted chicken... a one pot meal....at kitchen! kitchen!

 What can be more simpler and delicious than a roasted chicken with the simplest ingredients that you already have! 


After an hour in the oven comes this wonderfully roasted one pot chicken meal.
Garnish with scallions
  This is so simple......

Chicken parts
4 Yukon gold potatoes cut in half
1-1/2 cups of cherry tomatoes
1 medium size onion quartered
3 whole garlic cloves
A sprinkling of olive oil
Koshed salt
Amazing dry rub
Season the chicken parts with the Amazing dry rub and set aside
In a medium size oven proofed pan gather together all the ingredients and season with salt, and pepper.
Sprinkle some olive oil and toss making sure that all the inredrients are coated with olive oil, Add the chiken on top of the potatoes and bake at 350 F for 50-1 hr. until golden. Serve and garnish with scallions.
It is simply easy and delicious......EASY is good!

Roasted potatoes and brocooli salad...........an encore...at kitchen! kitchen!

Roasted potatoes and broccoli salad with
a dusting of goat cheese.
This salad served with my MMH dressing is just screaming with delight!
If you don't like broccoli, this will change your mind......

2 cups of broccoli florets ( microwaved with a soaking wet paper towel for 2 minutes - or steam if you're not in a big rush)
*you may substitute with haricot vert *(fancy name for those cute string beans)
1 large sweet onions carmelized in olive oil
2 plum tomatoes quartered
Shavings of a very good goat cheese - ( or parmessan cheese )
4 medium size red or yukon gold potatoes thickly sliced - seasoned with salt and olive oil; roast in the oven for 50 minutes until golden brown and a little crispy.
Mixed everything in a large bowl, top with goat cheese shavings, and serve with MMH dressing.
You may even add some well deserved crisped bacon bits !
A great side dish for just about anything...especially a big thick juicy steak!

MMH dressing:
2 parts mustard (Dijon)
4 parts mayonnaise
A drizzle of honey (as sweet as you want it to taste....or not)
Whisk in a bowl
Try this dish and you will change your mind about broccoli!

chilean sea bass.....making it light....delicious & buttery .....at kitchen! kitchen!

Chilean Sea Bass Steaks
The fish itself is insanely delicious no matter what you do with it.
Simply baked with just a light seasoning of salt & pepper,
then served with baby bok choy and green onions cooked in its' juices
is an absolute delight!
2 chilean sea bass steaks
Seasoned lightly with sea salt and freshly ground pepper
Sear one side for less than a minute; cover with foil and bake for 10 minutes or so in 400 preheated oven in an oven safe pan until cooked but not overdone. (test by poking a fork to the meat).
Transfer to a platter; keep warm and set aside
In the same pan with the fish juices, add a little wine wine and a teaspoon of butter and cook the bok choy and green onions until welted on the stove top.
Scatter all over the fish juices and all.

Serve with boiled potatoes or plain cooked basmati rice.
